2 Tbsp margarine
3/4 cup Splenda
1 egg
1 egg white
2 cups mashed bananas
1/4 cup applesauce
1/4 cup honey
1 tsp vanilla
1 1/3 cups flour
2/3 cup whole wheat flour
1 tsp baking soda
1/2 tsp salt

Beat margarine & Splenda for 2 min. until crumbly. Add egg, then egg white, beating well after each addition. Beat until light & fluffy. Stir in the bananas, applesauce, honey, and vanilla. Combine the flours, baking soda & salt; stir into rest until just moistened.

Place in muffin tins sprayed with cooking spray.

Bake in 325 degrees F oven for 20 minutes. Very tasty and filling!
