In a large skillet melt 1/4 cup butter and add onions and mushrooms. Saute until tender on medium heat.
In a separate pot make a roux by melting 4 tablespoons of butter and adding flour, this mixture will become thick, heat until its golden in color. Slowly add the vegetable broth while stirring, and then add mushroom/onion mixture and soy sauce. Bring to a simmer, reduce heat. Add salt and pepper, stirring often.
Allow to cook for 8-10 minutes, until gravy thickens.
