Original recipe yields 1 serving
Marinade:
1 cup sugar
1 cup apple cider vinegar
1/4 cup good virgin olive oil
Other ingredients:
1 green pepper, chopped finely
1/2 yellow pepper, chopped finely
1/2 red pepper, chopped finely
2 stalk s celery, finely chopped
2 green onions, finely chopped
3-4 cloves garlic, crushed or finely chopped
Handful of cilantro
1 can (15 ½ oz.) black beans
1 can (15 ½ oz.) pinto beans
1 can (15 ½ oz.) white corn
"Scoop-shaped" chips (we prefer Tostitos)

Add all marinade ingredients to a pan and bring marinade to a boil on the stove; take off stove and cool.

Meanwhile, finely chop all veggies. Mix with remaining ingredients (except chips). When marinade is cooled, pour marinade over mixture, stir and chill a couple of hours or overnight.

Before serving, drain marinade off and serve with your favorite scoop-shaped chips.
