Pepperoni Chicken

4 boneless skinless chicken breasts
4 oz Swiss cheese, sliced
4 oz pepperoni, sliced thin
1 egg
1 cup Italian bread crumbs
2 Tbsp olive oil

Pound chicken thin between Saran Wrap. Layer cheese and pepperoni on top of each chicken breast. Roll up lengthwise and secure with a toothpick.

Beat egg and dip chicken in egg then roll in bread crumbs.

Put oil in heated skillet on medium, fry chicken, 15 min on each side or until cooked through. Remove toothpicks before serving.
