Pork Tomatillo

5 lb tomatillos
2 Tbsp olive oil
1 med onion, diced
1 clove garlic, diced
1 can (4 oz.) diced green chiles
2 lb pork stew meat
1 bunch cilantro, chopped, no stems
3 Tbsp cumin
4 cups prepared Minute Rice

Clean and quarter tomatillos. Set aside in a bowl. Heat olive oil in large skillet over med heat. Saute onions, garlic & green chiles for 2 min then add pork. Cover and let brown.

Put tomatillos in food processor/blender run until almost puree, but still has some chunky texture too it. Pour in pan over pork. Add cilantro and cumin and stir till well blended.

Cover and simmer 30 minutes. Serve over Minute rice.
