Original recipe yields 1 serving
1/2 cup butter
1/4 cup olive oil
1 clove garlic, crushed
1 cup fresh sliced mushrooms
1 pound peeled crawfish tails
1/2 cup chopped green onions with tops
1/4 cup chopped parsley
1/3 cup parmesan cheese
1 cup half-and-half cream (1 cup skim milk and 1-2 Tbsp. of cornstarch may be substituted)
Salt and pepper to taste
1 package (8 oz.) linguini, cooked

Melt butter with olive oil in large skillet. Saute garlic and mushrooms until mushrooms are tender.

Add crawfish tails and green onions. Cook 5 min over low heat.

Stir in chopped parsley. Sprinkle with parmesan cheese and add half-and-half. Simmer for 5 min. Salt and pepper to taste. Serve over hot linguini.
