Preheat oven to 300°F. In large saucepan, cover the pre-soaked beans with water and bring to a boil. Reduce heat to medium and cook (covered) for 30 min. Drain beans. Stir in bacon, sugar, molasses and mustard.
Transfer all to a medium size bean pot or oven safe casserole dish. Bake, covered, 7 hours. If beans become too dry, add chicken stock.
