1/3 cup celery
1/4 cup chopped parsley
2 Tbsp chopped onions
3 Tbsp vegetable oil
2 Tbsp red wine vinegar

Wash potatoes cut into halves or quarters. Boil 15-18 minutes, drain, and return to pan.
