Cucumber Raita

1 cup yogurt
1/2 cup water
1 English cucumber, skin removed and grated
1 tsp black pepper
Salt as per taste
1 tsp sugar or half packet Splenda
1 Tbsp lemon juice
1 jalapeno, seeds removed and diced

Blend yogurt and water into thick consistency. Add grated cucumber, black pepper, salt, sugar, lemon juice and jalapenos and mix well.

Chill the raita for at least 2 hours before serving. If you do not like too much heat, you could eliminate the jalepeno.
