In a mixing bowl, combine egg, milk, apple, sugar, salt, orange peel, juice and vanilla. Stir together flour and baking powder. Fold into egg mixture, stirring just until moistened.
In a deep-fat fryer, heat oil to 350°F. Drop batter by rounded teaspoonfuls. Fry until deep golden brown, about 3-4 minutes, turning once.
Drain fritters thoroughly on paper towels. Roll in sugar of sift sugar over them.
