Put the cheesecake filling in a large bowl. Add 3-4 Tbsp. of the gelatin powder. Mix well.
Spread a thin layer of the cheesecake mixture on bottom of a trifle dish or bowl. Place a layer of Nilla Wafers on that. Add a layer of the cheesecake mix. Top with sliced strawberries. Top with a thin layer of whipped topping. Repeat with a layer of Nilla Wafers, cheesecake mix, thin layer of whipped topping. Final layer: layer with cheesecake mixture (skip the Nilla wafers for this final layer). Top with strawberries in a decorative pattern, then take remaining whipped topping and place a large dollop in the middle, spreading out a little bit, but don't cover the top. Take Nilla wafers and press them around the edges of the bowl (on their edges around the perimeter of the bowl). Top with a whole strawberry and spearmint leaf garnish.
Chill for 2 hours before serving.
