Clean chicken breasts. Heat pan with oil. Sprinkle salt & pepper on both sides of the chicken. Slowly place chicken in hot pan and brown on both sides (don't cook all the way through).
While chicken is browning, combine in a bowl cream of mushroom soup, water, Dijon mustard and brown rice.
After chicken has browned on both sides, add in the rice and cream of mushroom mixture and simmer on low until chicken is cooked all the way through. Garnish with dried onions.
