Crust: Mix graham cracker crumbs and butter in a 9x13 baking dish. Bake at 350°F for 10 minutes then cool.
Mix Jell-O and hot water. Let cool. Add lemon juice. Mix cream cheese, sugar, and vanilla until very smooth. Add to Jell-O and lemon juice. Fold in Cool Whip.
Pour into graham cracker crusts and cool several hours. Enjoy!
