Cream shortening and sugar thoroughly. Add honey gradually, beating until well blended. Add eggs, vanilla and lemon peel. Sift together dry ingredients and add alternately with milk to creamed mixture.
Pour into 2 waxed-paper-lined 9-inch cake pans.
Bake at 350°F for 35 to 40 minutes, or until done. Cool about a half hour before removing from pans. Frost with favorite icing.
