Preheat oven to 350 degrees F. Prepare a cookie sheet with non-stick cooking spray. Wash chicken pieces and pat dry.
In a pie plate, beat the egg and whipping cream well. Take the pork skins and put into a food processor along with the seasonings and finely chop. Remove all large pieces. Pour into another pie plate. Dip each chicken piece into the wet mix, then into the pork skins. Coat well. Place on cookie sheet.
Bake for 20 minutes. Turn chicken pieces and bake an additional 20 minutes or until juices run clear.
