Original recipe yields 1 serving
4 slices Oscar Mayer lower-salt bacon
2 cups small red potatoes, cut into 1/2" pieces
1 cup frozen pepper stir fry mix, thawed, drained
1 can (12 oz.) fat-free evaporated milk
Salt & pepper
1 pkg (9 oz.) frozen tortellini
1 scallion, sliced

In medium-sized cooking pot (sprayed with cooking spray) over medium heat, cook bacon until crisp, drain on paper towels.

To drippings in pan, add potatoes & pepper stir-fry. Cook, stirring occasionally, until potatoes start to soften.

Stir in 1-1/2 cups water, evaporated milk and salt & pepper to taste. Bring to a boil, add tortellini, and cook until tender, about 8-10 min. Remove from heat, stir in scallion. Serve sprinkled with crumbled bacon.
