Original recipe yields 1 serving
2 large acorn squash
1/4 tsp each salt and pepper
1/4 cup light butter, melted
1/4 cup packed brown sugar
1/4 tsp ground nutmeg

Cut each squash in quarters lengthwise, remove, discard seeds & membranes. Sprinkle evenly with salt & pepper.

Place cut side down on foil-lined baking sheet coated with cooking spray. Bake at 400°F for 45 min or until squash is tender.

Combine butter, brown sugar and nutmeg. Turn squash, cut sides up, on baking sheet. Sprinkle evenly with butter mix. Bake 5-7 min or until brown.
