Sherry's Homemade Mixed Fruit Granola

Original recipe yields 1 serving
3 cups uncooked regular oats
1/4 cup wheat germ
1/4 cup sunflower seed kernels
1/2 cup pumpkin seed kernels
1/4 cup chopped pecans
2 Tbsp sesame seeds
1/2 cup butter
1/2 cup packed brown sugar
2 Tbsp corn syrup
1 tsp vanilla
1 cup chopped mixed dried fruit

Combine first 6 ingredients in a bowl, set aside. In medium saucepan over medium heat, cook butter and brown sugar, stirring constantly, until butter is melted and sugar is dissolved. Stir in corn syrup. Remove from heat, stir in vanilla. Pour mixture evenly over oats mix, toss to coat well.

Spread mix evenly onto jelly roll pan that has been lightly sprayed with cooking spray.

Bake at 350°F for 25-30 min, stirring 3 times. Cool completely, stir in dried fruit, mix. Store in airtight containers for up to 2 weeks.
