Original recipe yields 1 serving
1 medium onion, chopped
1 Tbsp olive/canola oil mix
2 cans (14 oz. each) fat-free chicken broth
1-1/2 cups water
1 can (15 oz.) cannellini beans, rinsed & drained
1 medium zucchini, coarsely chopped
1 cup carrots, sliced
3 cloves minced garlic
3/4 cup multigrain elbow macaroni
1 tsp dried oregano
6 cups coarsely torn, trimmed Swiss chard or 8 cups packaged fresh baby spinach leaves
1 can (14-1/2 oz.) diced tomatoes with spices

In 5-6 quart Dutch oven, cook onion in hot oil over medium heat until tender.

Add broth, water, beans, zucchini, carrots and garlic. Bring to boil. Add pasta and dried oregano. Return to boil, reduce heat. Simmer, covered for 5 min. Stir in Swiss chard, or stir in spinach at last minute with tomatoes. Simmer, uncovered for 5-7 min or until pasta is tender, stir occasionally.

Stir in tomatoes and more oregano, remove from heat. Season with salt and black pepper.
