Preheat oven to 350°F. Coat a 2-quart baking dish with cooking spray. In bowl, combine ricotta, spinach and oregano. Reserve.
Spread 1/2 cup Alfredo sauce over bottom of baking dish. Top with single layer of ravioli, half of the ricotta mix, 1/2 cup mozzarella, and 1/2 cup Alfredo sauce. Continue layering with half of remaining ravioli, remaining ricotta and 1/2 mozzarella. Top with remaining ravioli and sauce, cover with foil.
Bake 45 minutes. Uncover, bake 20 min until browned and heated through. Sprinkle with remaining 1/2 cup mozzarella cheese during last 5 minutes. Let stand 10 minutes. Garnish with parsley sprigs.
