Preheat oven to 425°F. Spray a baking sheet with cooking spray. Unroll pie crust dough on lightly floured surface. Cut circular shapes using a 4-inch round cutter. Lightly brush edges of each circle with water.
Spoon 2 Tbsp. of applesauce in the center of each circle. Fold circles in half, press edges to seal. Place on baking sheet.
