Original recipe yields 1 serving
3 cups broccoli florets
1/2 cup olive oil, divided
1 1/2 cups chopped red pepper
3/4 cup chopped yellow onion
1 cup yellow squash
3 Tbsp heavy cream
1 lb thin spaghetti or capellini, cooked, drained
1/2 cup grated parmesan cheese
Pepper to taste

In saucepan, bring 2 quarts salted water to a boil. Blanch broccoli for 2 minutes.

In saucepan, heat 1/4 cup oil over medium heat. Add red peppers and onions; saute 7 minutes. Stir in squash, cook 3 minutes.

Stir in remaining 1/4 cup oil, broccoli & cream - heat through. Add cooked pasta & toss. Sprinkle with cheese & pepper - toss again.
