Coat a large skillet with cooking spray, heat over med-high heat. Sprinkle chicken with rosemary, 1/2 tsp. salt and 1/4 tsp pepper. Cook chicken for 5 min per side or until browned. Remove to plate. Reserve.
Coat same skillet with more cooking spray. Cook pepper stir-fry and mushrooms over med-high heat for 8 min. Add chicken broth, boil 1 min.
Add tomatoes and chicken. Cover, reduce heat to medium, simmer for 8 min. Uncover, simmer until sauce thickens and chicken is cooked through. Best served over rice.
