In large skillet with lid heat oil, place chicken breasts in hot pan turning frequently, keeping covered, while cooking.
When almost done, remove from pan, cut into small bite size pieces, return to pan, add salsa and simmer to heat thoroughly. While this is heating prepare Minute Rice as per package instructions.
Serve over rice and cover with shredded cheese and enjoy.
