Preheat oven to 350°F. In a small bowl, combine butter, honey, lemon juice and ginger, mix well.
Spray a 9 x 13-inch baking dish with cooking spray. Wash, peel, and cut potatoes into 1/4-inch slices. Place potatoes in baking dish. Spread with a little of the butter mix. Continue layering until all the potatoes and butter mix are gone. Cover with foil.
Bake for 35 minutes. Remove foil and bake for 20 minutes, or until potatoes are tender. Sprinkle potatoes with cinnamon and brown
sugar. Place under broiler for 2 minutes.
