Original recipe yields 1 serving
1 packet Pasta Sauce Mix
1 can (28 oz.) diced tomatoes
2 Tbsp olive oil
1 lb Italian sausage
Olive oil for browning
1-2 tsp Italian seasoning
1-2 tsp seasoning salt
3/4 cup frozen chopped spinach, thawed and well drained
1/3 cup ricotta cheese
1/4 cup Italian blend shredded cheese
1 cup marinara
8 manicotti noodles, cooked & drained

Preheat oven to 350 degrees F. Mix Pasta Sauce Mix Packet in a medium bowl with tomatoes and olive oil. Brown sausage in additional olive oil, cut sausage into 8 links and return to pan. Add Italian Seasoning and seasoning salt and spinach. Heat through. Add pasta sauce/tomato mix and half of each cheese to thicken.

Drizzle small amount of marinara sauce on bottom of baking dish. Stuff each manicotti shell with meat mixture, place on top of sauce in baking dish. Pour remaining sauces over the shells. Top with dollops of remaining ricotta and sprinkle with remaining Italian cheese.

Bake at 350°F for 15 minutes.
