Original recipe yields 1 serving
4 Tbsp butter, divided
8 oz sweet Italian sausage, casings removed
1 lg onion, chopped
1 red pepper, chopped
1 pkg (6 oz.) cornbread stuffing mix
2 Tbsp chopped fresh parsley

In large pot, melt 2 Tbsp. butter over med-high heat. Crumble in sausage, cook, stirring occasionally until browned. Add onion and pepper. Cook until tender.

Add 1-1/2 cup water and remaining 2 Tbsp. butter. Bring to boil. Stir in stuffing mix until well combined. Cover, remove from heat.

Let stand until water is absorbed. Fluff with fork, stir in parsley.
