Heat dry skillet over med heat, add walnuts; cook, stirring, until lightly browned. Remove from skillet, cool completely.
In bowl, with mixer on medium speed, beat cream cheese, sour cream, salt and pepper until smooth. Stir in scallions. Divide 1-1/2 cups mixture between 2 separate bowls. Reserve. To remaining mix, stir in horseradish and paprika, then bacon. To one reserved bowl, stir in mustard, apple and half cup cheddar. To remaining bowl, stir in blue cheese and 1/2 cup walnuts. Cover bowls, chill 1 hr.
Moisten hands with water. Shape bacon mixture into ball, roll in parsley. Shape apple mix into ball, roll in remaining cheddar. Shape blue cheese mix into ball, and roll in remaining 1 cup walnuts. Serve cheese balls with sliced veggies and crackers.
