Preheat oven to 350 degrees F. Grease 9 x 13 baking pan or dish. Cook shells as package directs BUT only until firm to bite (about 13 minutes). Drain well and set it in sink.
Place turkey and stuffing in food processor or blender and pulse until finely ground and combined. Place mixture in bowl along with cream cheese, parmesan cheese, mayonnaise and 2 cups of the mozzarella cheese. Mix until well blended
Spread 1/2 cup of gravy on the bottom of prepared dish. Stuff shells with turkey mixture, place shells in tight rows in pan, top with remaining gravy and remaining 2 cups of mozzarella cheese.
Bake covered for 45 minutes uncover and cook additional 10 minutes until top is brown and bubbly. Allow to cool 5 minutes before serving.
