Seafood Popovers

Original recipe yields 1 serving
12 oz minced, pre steamed scallops (or crabmeat)
3 oz cream cheese
2 tablespoons minced red onion
1/2 teaspoon minced garlic
2 teaspoon s chopped parsley
1/4 cup grated parmesan cheese, divided
2-3 tablespoons melted butter
4 cans biscuits
Salt and pepper to taste

Mix all ingredients well EXCEPT: retain 2 tablespoons parmesan cheese, butter and biscuits.

Flatten out biscuits into a 4 inch circle, I use my hand. Place about a tablespoon of filling in the center and fold over forming a half moon shape. Place on a cookie sheet lined with parchment or with nonstick spray. Brush with butter and using the tines of a fork press around the edges of each biscuit to seal, sprinkle with remaining cheese.

Bake at 375°F for about 10 minutes or until golden.
