3 Tbsp extra virgin olive oil (EVOO)
2 tsp ginger paste
2 tsp curry powder
1 handful cilantro chopped
1 pinch ground coriander (or 3 hail pods, cracked) OPTIONAL
3 Tbsp coconut milk powder (dissolved in 1 cup of water)
4 fish fillets (white)

Heat oil in deep fry pan on medium-high heat. Add ginger paste. Cook until brown, about 2 min.

Add curry powder, cook until smell turns sweet, about 1 min.

Add cilantro, coriander, then add coconut milk and fish. Cook on low heat until fish is done. Serve with rice.
