Marmalade Bread

Original recipe yields 1 serving
3 cups flour
1 Tbsp baking powder
1 tsp salt
1/4 tsp baking soda
1 1/2 cups orange marmalade, divided
1 egg, beaten
3/4 cup orange juice
1/4 cup salad oil
1 cup walnuts, chopped

Preheat oven to 350 degrees F. Grease 9 by 5 inch loaf pan. Combine flour, baking powder, salt, baking soda. Reserve 1/4 cup marmalade. Combine remaining marmalade, egg, orange juice and oil; add to flour mixture, stirring just until mixture is moistened. Stir in chopped nuts.

Pour batter into a greased 9 by 5 inch loaf pan.

Bake at 350 degrees F for about 1 hour, or until a wooden pick or cake tester inserted in center comes out clean. Transfer loaf to a baking sheet. Spread reserved marmalade over top of loaf and return to oven for a minute or two, until glazed. Cool on cake rack.
