8 medium potatoes, boiled with skins and cooled completely (6 cups)*
2 cups grated cheddar cheese
10 Tbsp butter, divided
1 1/2 cups sour cream at room temp
1/2 cup chopped green onions (use some of the green tops too)
1 tsp salt
1/2 tsp pepper

Let's Make It
Preheat oven to 350°F. Grease 2-qt. baking dish. Peel and shred potatoes. Combine cheese and 8 Tbsp. butter in a large sauce pan. Cook over low heat stirring occasionally until almost melted.
Remove from heat and stir in sour cream, onions, salt and pepper. Fold in potatoes and pour mix into the baking dish. Dot with remaining butter.
Bake for 25 minutes or heated all the way through.
