Preheat oven to 350 degrees F. Coat pans with non stick spray. Combine sugar, oil and eggs; mix well. Add in pumpkin, salt, baking soda, cinnamon & nutmeg, mix well. Add flour and mix well.
Fill pans about 1/2 full.
For loaf pans: bake at 350 degrees F for 35-40 minutes. For mini loaf pans, check for doneness with a toothpick starting at 25 minutes.
For muffins: bake at 350 degrees F for 25-30 minutes depending on size of muffins.
