Put crock-pot on high and start to dice block cheese into small cubes. Add the blocks of cheese into the pot to start it melting.
Then add 1 can of Ro*Tel, with or without the green peppers. Stir this the best you can to help keep it mixed together. Put lid on pot and stir every 10-20 min. After cheese has melted add the other can of Ro*Tel. You don't have to add to cans it depends on how thick you want your dip. Stir in the Ro*Tel and set pot to low.
Get a meat pan and grind up the meat. Cook the hamburger meat in the pan until done, drain and add to the cheese and Ro*Tel mix. Stir it until there is an even mix of all the ingredients. Then enjoy.
