BJ's Stuffed Pepper Soup

Original recipe yields 1 serving
1 lb lean ground burger, browned and drained
3 large green peppers, diced
1 med onion, diced small
2 cans (15 oz. each) Hunts diced tomatoes
1 can (15 oz.) Hunts tomato sauce
2 Tbsp McCormick Italian Seasoning
1 Tbsp McCormick Oregano
6 cups prepared Swanson beef broth
Salt and Pepper to taste
2/3 cup Uncle Ben's instant rice

Place browned and drained burger in a large stock pot on med. heat and add peppers and onions till tender. Add diced tomatoes, tomato sauce and seasonings. Stir till well mixed and heated through well. Add beef broth and stir well.

Let this simmer for at least 1 hour checking liquid level.(Add more beef broth if it begins to cook away.)

Add rice and continue to simmer for another 30 minutes or until rice is tender.
