Original recipe yields 1 serving
1 1/4 lb softened cream cheese
3/4 cup softened butter
5 oz softened goat cheese
1 lb sliced provolone cheese
1 cup pesto
20 sundried tomatoes (in oil) drained & diced
1/2 cup pine nuts - lightly toasted

Let's Make It

Mix cream cheese, softened butter & goat cheese.

Line a loaf pan with a piece of cheese cloth - layer into the pan in the following order:

-a few slices of provolone cheese (enough to cover bottom of pan)

-spread thin layer of softened cheese mixture

-spread thin layer of pesto

-a few slices of provolone

-spread thin layer of softened cheese mixture

-small handful of pine nuts and sun-dried tomatoes

You should be able to do the above layering 3 to 4 times - end with provolone on top. Wrap cloth up and over and wrap tightly with plastic wrap. You may want to weigh this down with a heavy dish or pan on top and refrigerate overnight. If you like, it freezes well - do this after it's been in the refrigerator overnight and wrap well with foil. It will keep several days in the refrigerator. Serve with sturdy crackers or sliced baguettes (it is also delicious as a spread on bagels).
