Original recipe yields 1 serving
2 cups sugar
4 large eggs
1 cup oil
2 cups cooked, cooled, firmly packed, sweet potatoes
2 cups plain flour
2 tsp baking soda
1 1/2 tsp salt
2 1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup raisins (optional)
Icing:
3/4 stick butter
1 pkg (8 oz.) cream cheese
1 box (1 lb.) powdered sugar
2 Tbsp orange juice or milk

Grease and flour three 8-inch cake pans. Preheat oven to 350°F. Blend together sugar, eggs, oil and sweet potatoes. Mix well to break up lumps of potatoes. Sift together remaining ingredients. Add to the sugar mixture, mixing well.

Pour batter into prepared pans, filling about half full. Bake 25-30 minutes or until done. Cool thoroughly.

Beat butter and cream cheese together until well mixed. Add sugar and orange juice or milk. Mix well and put between layers and on top of cake. Garnish with nuts, if desired.
