Slice chicken and sausage lengthwise in half. Cut sausage in 3 to 4 inch lengths. Marinate chicken in Italian dressing for at least 2 hours or overnight. Remove and season to taste with Cajun seasoning.
Coat pan with olive oil over med-high heat cook chicken and sausage 3-4 minutes per side. Remove and add peppers, and onions. Saute until onions become clear.
Arrange chicken on baking sheet. Top with 2 pieces of sausage, 1 Tbsp. veggies and 1 slice of cheese. Bake 15 minutes at 350°F or until cheese has melted.
