Original recipe yields 1 serving
1 cup all purpose flour
1/2 cup whole wheat flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1 cup sugar
1/2 cup "I can't believe it's not butter" baking sticks
3/4 cup buttermilk
1/4 cup Egg Beaters
1 Tbsp EACH, grated orange and lemon zest
2/3 cup confectioners' sugar
1 tsp orange zest

Let's Make It
Preheat oven to 350°F. Coat a 8 1/2" x 4 1/2" loaf pan with cooking spray, dust with flour. In bowl, combine flours, baking powder, salt, and baking soda. In bowl, with mixer on med-high speed, beat sugar and baking stick until blended. Beat in buttermilk and egg substitute until smooth. Add flour mix. Beat until just combined. Stir in zests. Transfer batter to pan.
Bake 50-55 min or until toothpick inserted in center comes out clean. Cool in pan 10 min. Remove from pan and cool on rack. Place loaf on plate.
In small bowl, stir 1 Tbsp. warm water with confectioners' sugar and 1 tsp. orange zest until smooth. Top loaf with glaze.
