Original recipe yields 1 serving
1/4 cup chopped orange bell pepper
1/4 cup chopped yellow bell pepper
3 oz Yellow Squash (sliced)
1 egg
Salt and Pepper to taste

1. Put peppers and squash in a skillet on med-high heat. Spray vegetables with cooking spray and cover. Let cook for 3 minutes stirring occasionally.

2. Meanwhile, crack egg into a small bowl and mix with a fork until the yolk and the white are well mixed. Remove the lid of the skillet, reduce heat to medium, and add the egg. Let cook until egg is semi-solid on the bottom.

3. Stir up the egg with the vegetables until egg is in a scrambled consistency. Season with salt and pepper and enjoy!
