1 piece sole, cut in half
Cajun spice
1 Tbsp butter
1 Tbsp garlic
1/4 heavy whipping cream
Pinch of parsley
2 Tbsp hot sauce
Pinch of salt and pepper
1 big scoop garlic mashed potatoes

Get your cast iron scorching hot, when ready use your favorite Cajun spice and cover the fish with it. Drop it in the pan and let cook, about 2 min each side.

While this is cooking, put butter and garlic in saute pan. When melted add cream, parsley and hot sauce stirring constantly until it thickens.

Place garlic mashed potatoes on plate and place fish on top and drizzle with sauce....enjoy.
