Original recipe yields 1 serving
4 (4 oz. each) salmon fillets
1/2 tsp salt
1/2 tsp curry
2 Tbsp oil
1 cup sliced onions
1 tsp minced garlic
Sauce
1 Tbsp tamarind sauce
1 Tbsp teriyaki sauce
1 Tbsp lime juice
1 Tbsp tomato sauce
1 Tbsp chopped cilantro
1 Tbsp chopped scallions
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp cumin
1/3 cup water

Rinse fish and pat with paper towel. Place in bowl, sprinkle salt and curry evenly on salmon. Mix sauce and set aside.

In a large frying pan heat 1 Tbsp. oil. Place fish gently in pan and cook 2 minutes on each side. Remove salmon and place on paper towels.

Add remaining oil, stir in onions and cook 1 minute, add garlic, cook 30 seconds, stir in sauce, simmer 5 minutes, return salmon to pan and simmer 5 minutes, remove from heat and serve with rice.
