Original recipe yields 1 serving
8 Roma tomatoes, seeded and diced
7 vine ripe tomatoes, seeded and diced
3 teaspoon s salt, divided
1-1/2 cups finely diced red onion
12-1/2 Serrano chiles, seeded and finely chopped (small); 8-10 medium; or 6-7 large
1/4 cup chopped fresh cilantro (loose)
1 tablespoon and 2 teaspoons lime juice
Tortilla chips or scoops

In a colander or strainer place the tomatoes and put colander on top of a bowl or pot to catch the water coming from the tomatoes. Add 2-1/2 tsp. salt and stir and let sit for at least one hour.

In a medium bowl, stir together tomatoes, onion, chili peppers, cilantro, remaining salt, and lime juice.

Chill for one hour in the refrigerator before serving.
