Place tortillas in toaster oven until they start to puff.
Remove and sprinkle Italian cheese mix on top of each. Spread tomato pieces on one tortilla, add seasonings. Lay the spinach leaves on top, then spread on cottage cheese with more seasonings if desired. Place other tortilla on top.
Return to toaster oven at 250°F for 5 min. Remove to plate and cut into wedges for one person or as appetizer.
