Original recipe yields 1 serving
1 can (16 oz.) red kidney beans (drained & rinsed)
1 can (15 oz.) garbanzo beans (drained & rinsed)
1 can (14 1/2 oz.) Italian style diced tomatoes (drained)
1 1/2 cups frozen peas
1 1/2 cups frozen corn
1/2 cup chopped onion
1/2 cup chopped green pepper
3 tablespoons red wine vinegar or cider vinegar
2 tablespoons olive oil or canola oil
1 clove garlic minced
1/2 teaspoon salt
1/4 teaspoon pepper

In a large bowl combine the first 7 ingredients.

In a small bowl combine vinegar, oil, garlic, salt and pepper till blended. Pour over bean mixture, toss gently to coat.
