Custard: Soften cream cheese in microwave. Blend cream cheese with egg yolks, sugar, vanilla, milk, and 3/4 cup coffee.
Assembly: Place Pecan Sandies in an even layer in the bottom of a 9x9 baking dish. Sprinkle or spritz Sandies with some of the prepared coffee. Pour 1/2 of the custard over the cookies. Place a second layer of Pecan Sandies over the custard and sprinkle or spritz with more coffee. Pour the second half of the custard over the cookies.
Cover and refrigerate overnight or at least 12 hours. Dust with cocoa powder and serve chilled.
