Melt butter and olive oil in stock pot then add chopped vegetables. Cover and simmer for 10 minutes until vegetables are soft.
Add stock and then the Stilton Cheese until it is melted. Simmer for 30 minutes covered.
Use an immersion blender to liquefy all ingredients. Add cream. Reheat. Serve.
