Preheat oven to 375 degrees F. Grease and flour two cake pans; set aside. In a medium bowl, mix together flour, baking powder, and salt. Set aside.
2. Place shortening, water, sugar, and vanilla in large bowl and mix for 1 minute. Add Jell-O mix, continue mixing for 1-2 minutes. Add eggs, one at a time, beating for a minute in between, scraping sides of bowl frequently. Alternate adding flour and milk. Pour into prepared pans.
3. Cook for 30 minutes, or until a toothpick comes out clean. Let cool in pans on wire rack, move to rack after 10 minutes. Top with frosting, serve, and enjoy!
