Original recipe yields 1 serving
1 stick butter
2 boxes Stove Top Cornbread Stuffing Mix, divided
2 lb yellow squash (can use 2 16 oz. frozen)
1 med chopped onion (or 1/2 cup frozen mirepoix mix)
1 can cream of chicken soup
1 pint sour cream
2 cups grated cheddar cheese

Melt butter add 1 box stuffing mix and press to line the bottom of a 9x13 pan.

Boil squash with onion. Drain. Mix squash with soup, sour cream, 1 box stuffing mix and cheese. Pour over crust.

Bake at 350°F for 30 min or until bubbly.
